A great and simple appitizer that almost anyone loves. Serve with carrot and celery sticks... a little blue cheese dressing or your favorite bbq sauce, or eat them "plain" (don't doubt it until you try it!)
Rub:
8 tablespoons dark brown sugar, tightly packed
3 tablespoons sea salt
1 tablespoon ancho chili powder
1 1/2 tablespoon paprika
1/4 teaspoon ground black pepper
1/4 teaspoon ground white pepper
2 teaspoon cayenne pepper
3/4 teaspoon chipotle pepper
1/2 teaspoon Old Bay Seasoning (make your own Old Bay equivalent here)
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
Wings:
Completely dry wings with paper towels
Add a good amount of rub and sprinkle with olive oil
Rub olive oil and rub into wings
Tent wings with aluminum foil with a lot of air above
Put in refrigerator for 2-4 hours to completely dry
Pull out from fridge 1 hour early
Put in smoker at 250 for 2 hrs
Serve
